Kibinago is a member of the sardine family and by nature is easily damaged and does not stay fresh for long. In order to deliver them to customers far away from home, freezing is an unavoidable process.

However, with conventional freezers, the ice crystals that form when the water in the cells freezes destroy the cellular tissue, so when the fish is thawed, the amino acids and various nutrients flow out as drips along with the thawed water, and the flavor cannot be restored to its pre-freezing state.

Proton-freezed kibinago does not lose its freshness when thawed. Fresh kibinago are also kept on ice until they reach your table, during which time their freshness deteriorates rapidly.

Our kibinago are freshly caught and immediately proton frozen. So, you only need to defrost them to get the freshness of freshly caught fish.
